Is it possible to add a set of late entry classes to my event with a later closing date and a higher entry fee than classes already there?

Yes

The system has the ability to add late entry classes to all your classes for an event. This is a feature however that only becomes active for a 12 hour period: between 6 hours before an event closes and until 6 hours after an event has closed.
